Desi Ghee- Keep fit and be Healthy

Desi Ghee is nothing but a clarified butter.  It is prepared by fermenting whole milk to curd, churning the curd to butter and finally boiling down the latter to ghee. It is the richest source of animal fat in a vegetarian diet. Ghee is predominantly consumed in south Asian countries. Food prepared in desi ghee is still considered better and Regular consumption of pure ghee enhances physical and mental strength, and keeps the body healthy.  Ghee has a high burning point, so it neither smokes nor burns when cooked.
Storage
The ghee can be stored for up to a year and even beyond if there is no smell or change in appearance. However, an ideal duration is to finish up your ghee in a year. It should be stored in the refrigerator if the duration of storage is more than three months. Make sure that you store ghee in an odourless and dry vessel. You must always use a clean and dry spoon to take it out. When the ghee is stored in an airtight container, it can be used for up to a year after opening it, or till the time it smells and tastes fine.
Benefits
 The body needs certain fats in its diet in order to perform vital functions, including protecting the stomach wall from digestive acids, building and strengthening cell membranes and supporting nerve, skin and brain health. Lactose-friendly
Ghee contains negligible quantity of lactose and casein. It doesn’t set off milk allergies like other dairy products. If you have lactose-intolerance, ghee based recipes are apt for you than butter based ones.

Cow ghee is richer in quantity of short- and medium-chain fatty acids, vitamins, A, D, E, K, and conjugated linoleic acid. It also contains butyrate, the most ketogenic acid that promotes a healthy metabolism and gut health.

Ayurveda and Desi Ghee
Ghee is also cited as the best substance for preparing the body for Ayurveda’s internal detoxification. This is because Ghee is given as the best remedy for diseases due to aggravated Pitta and Vata doshas. Ghee alleviates Pitta dosha by its cold, sweet properties and Vata by its oiliness. Ghee is hence specially recommended in autumn when Pitta’s hot nature can get aggravated after summer. 

Things to keep in mind
While using desi ghee especially cow ghee ‘moderate’ is the word to remember. It means even if the ghee has so many health benefits attached to it, it should be consumed in moderation. Exercise or physical activity is necessary for those consuming cow ghee on daily basis. Otherwise, it may lead to weight gain.  Also to reap the benefits of desi ghee make sure the ghee you are using is pure and not adulterated.
